Now that we are finally in spring and the weather has softened up, what better way to celebrate than with a cold pina colada in your hand!
If you remember from our posts on Instagram, we had 3 pineapples on display at the show and by the last day the pineapples were perfectly ripe. As soon as I got home from the show I made sure to cut up all the pineapples, put them in a plastic bag and place them in the freezer. I personally like to have blended drinks with the actual frozen fruits as oppose to adding the fruit with ice - I find the water and fruit mixes better together. This way whenever you want to make pina colada, you'll have them right on hand!
Let's get started.
What you'll need:
2 cups of cut pineapple (make sure it is very ripe - color should be more yellow than green)
2 cups of coconut milk (you can use coconut cream if you like)
2 oz of rum (or more of course! )
Place all the ingredients into the blender and blend away! You can add more coconut milk as you go, you may like it to be more icy or runny.
If you're feeling fancy you can garnish the glass with some left over pineapple pieces or just stick a straw into the blender! Either way you're going to LOVE this drink. ;)
